Hoe Cakes
- 1 Cup – Self Rising Cornmeal Mix
- 1 TBS – Sugar
- 1 TSP – Salt
- 1 Cup – AP Flour
- ¾ Cup – Buttermilk
- 2 – Large Eggs
- ¼ – Melted Butter
- 1 TBS – Black Pepper
- ¼ Cup – Bacon Drippings
- Mix all ingredients together in a large bowl
- Heat 2 TBS of bacon drippings at medium heat
- Ladle a ¼ cup of mix in the middle of heated pan
- Cook for 2 minutes on each side or until golden brown
Whiskey Maple Glaze
- 1 cup – Whiskey
- 1 cup – Maple Syrup
- Cook until reduced by ½ at a low heat
Nashville Hot Fried Chicken Thighs
- 3 Cups – Buttermilk
- ½ Cup – Pickle Juice
- ½ Cup – Hot Sauce
- 3 Cups – Flour
- 4 – Chicken Thighs
- ½ Cup – Nashville Hot Seasoning Mix (Reserve 2 TBS)
- Canola Oil
- Heavy Bottom Pot
- Marinate chicken thighs in pickle juice, buttermilk, and hot sauce for 2 hours
- Heat oil to 325 Degrees
- Mix all Nashville hot seasoning (besides 2 TBS) into flour
- Dredge chicken in the seasoned flour mixture
- Fry chicken until internal temperature is 165 degrees
- Season chicken out of the oil with the reserved Nashville hot seasoning mix
