<p><b>Hoe Cakes<span class="Apple-converted-space"> </span></b></p>
<ul>
<li>1 Cup – Self Rising Cornmeal Mix</li>
<li>1 TBS – Sugar</li>
<li>1 TSP – Salt</li>
<li>1 Cup – AP Flour<span class="Apple-converted-space"> </span></li>
<li>¾ Cup – Buttermilk<span class="Apple-converted-space"> </span></li>
<li>2 &#8211; Large Eggs</li>
<li>¼ &#8211; Melted Butter</li>
<li>1 TBS – Black Pepper</li>
<li>¼ Cup – Bacon Drippings</li>
</ul>
<ol>
<li>Mix all ingredients together in a large bowl</li>
<li>Heat 2 TBS of bacon drippings at medium heat</li>
<li>Ladle a ¼ cup of mix in the middle of heated pan<span class="Apple-converted-space"> </span></li>
<li>Cook for 2 minutes on each side or until golden brown</li>
</ol>
<p><b>Whiskey Maple Glaze<span class="Apple-converted-space"> </span></b></p>
<ul>
<li>1 cup &#8211; Whiskey<span class="Apple-converted-space"> </span></li>
<li>1 cup &#8211; Maple Syrup</li>
</ul>
<ol>
<li>Cook until reduced by ½ at a low heat</li>
</ol>
<p><b>Nashville Hot Fried Chicken Thighs</b></p>
<ul>
<li>3 Cups – Buttermilk<span class="Apple-converted-space"> </span></li>
<li>½ Cup – Pickle Juice</li>
<li>½ Cup – Hot Sauce</li>
<li>3 Cups – Flour</li>
<li>4 &#8211; Chicken Thighs</li>
<li>½ Cup – Nashville Hot Seasoning Mix (Reserve 2 TBS)<span class="Apple-converted-space"> </span></li>
<li>Canola Oil</li>
<li>Heavy Bottom Pot</li>
</ul>
<ol>
<li>Marinate chicken thighs in pickle juice, buttermilk, and hot sauce for 2 hours</li>
<li>Heat oil to 325 Degrees<span class="Apple-converted-space"> </span></li>
<li>Mix all Nashville hot seasoning (besides 2 TBS) into flour<span class="Apple-converted-space"> </span></li>
<li>Dredge chicken in the seasoned flour mixture</li>
<li>Fry chicken until internal temperature is 165 degrees</li>
<li>Season chicken out of the oil with the reserved Nashville hot seasoning mix</li>
